Want a fun easter project that you can do with the kids? Something thats different then just making the traditional tye dyed Easter eggs that you can't even eat afterwards? Try these super simple, fun, and extremely edible Marshmallow Easter Bunnies. The kids will love making them and then getting to eat them afterwards!
Fluffy Marshmallow Easter Bunnies
Begin by melting the white chocolate making sure not to over cook it. I placed the white chocolate morsels in a microwave safe dish and heating for 30 seconds, stirring and then for another 10 seconds intervals till completely melted. Drop in the almonds one at a time and cover with white chocolate. Place on a wax paper lined plate to harden for the Bunnies ears.
Next, make the sugar glaze that will hold the coconut flakes in place on the marshmallows. 2 Tbs water and 1 cup powdered sugar. The glaze should be as thick as syrup. If it is not, add more powdered sugar. Roll the large and small marshmallows, first in the sugar glaze and then in the coconut flakes. Place on wax paper to dry.
Once the glaze has hardened and secured the coconut flakes to the marshmallows, about 5 minutes, reheat the white chocolate for 10 seconds in the microwave so it's liquid again. Place a dab of white chocolate on the bottom of one of the large marshmallows. Place the marshmallow on top of another large marshmallow. Do the same to 3 small marshmallows, but use 2 for feet in the front of the bunny and one for a tail in the back. Cut 1 small, non coconut covered, marshmallow in half for the nose. Secure in the middle of the top marshmallow with a dab of white chocolate. Let the white chocolate harden, about 5 minutes.
Now it's time for the ears. On the top of the large marshmallow cut a line the length of the marshmallow. (Make sure the line is parallel to the feet and the nose so that the ears are facing the correct direction.) Place 2 white chocolate covered almonds in the slit. The stickiness of the marshmallow holds the ears in place.
Decorate the bunny's face using black and red decorating gel. You can make the carrot by using a carrot peel and cutting into small triangles and securing to rosemary leaves with red decorating gel.
