Green Eggs and Turkey Bacon Bowl

Want a simple, delicious breakfast idea? Think egg sandwich, but instead of 2 slices of toast, a bread bowl that holds the egg wrapped in delicious turkey bacon and topped with creamy avocado spread. Sinfully delicious, but actually pretty healthy. Using turkey bacon instead of pork bacon cuts down on fat, using the avocado spread instead of hollandaise sauce cuts down on the calories and if you use a whole wheat roll instead of a white flour roll, you've created a perfectly healthy and tasty breakfast. I would just make sure that you make a few extra's cause when you finish yours I promise you will search for another. 

Green Eggs and Turkey Bacon Bowl


Begin by cutting the top and center out of the roll. Make sure you don't cut through the bottom of the roll otherwise the egg will leak out of the "bowl". Next wrap two pieces of microwavable turkey bacon around the inside of the whole you just cut out of the roll.


Then crack an egg into the center of the bacon wrapped whole. If you don't want your yolk to be runny, you can whisk the egg in a separate bowl before you pour it into the center of the roll. Bake the bowl for 30 minutes in a 350 degree oven. Sprinkle cheese over top and place back in the oven for 5 minutes or until cheese is melted.


To make the avocado spread, begin with a whole avocado, minced garlic, and freshly squeezed lemon juice. Place all ingredients in a small food processor and blend till smooth and creamy. Place a dollop of the avocado spread on top the egg and season with salt and pepper. 


Now just pick up the bowl and take a bite or cut with a knife and fork. Either way it's just as delicious.

Ingredients
4 whole wheat rolls
8 slices of microwavable turkey bacon
4 large eggs
1 cup shredded monterey jack cheese
1 avocado
2 cloves garlic, minced
1/2 lemon, juiced
salt and pepper to taste

1. Preheat oven to 350 degrees. Begin by cutting the top and center out of the roll. Make sure you don't cut through the bottom of the roll otherwise the egg will leak out of the "bowl". Next wrap two pieces of microwavable turkey bacon around the inside of the whole you just cut out of the roll.

2. Then crack an egg into the center of the bacon wrapped whole. If you don't want your yolk to be runny, you can whisk the egg in a separate bowl before you pour it into the center of the roll. Bake the bowl for 30 minutes in a preheated oven.

3. When egg is cooked through, sprinkle cheese over top and place back in the oven for 5 minutes or until cheese is melted.

4. Meanwhile, make the avocado spread by placing the peeled and seeded avocado, minced garlic, and freshly squeezed lemon juice in a small food processor and blending till smooth and creamy. Place a dollop of the avocado spread on top the egg and season with salt and pepper.
