Short Rib Shepherd's Pie

Short Ribs are one of my favorite ways to eat red meat. It's the meat thats next to the rib bones and when you slow cook it, it becomes this moist, shredded meat full of flavor. I've cooked short ribs many ways, but this night I thought why night combine it with a comfort food staple, shepherd's pie. Shepherd's Pie is pretty much an entire meat and potatoes meal in a casserole. Really a genius idea if you ask me. I love a good casserole. All the flavors seem to meld into each-other as it bakes creating a cohesive flavor combination. Short ribs, that are slow cooked with carrots, celery, onions, and red wine, topped with garlic mashed potatoes; this casserole has a nice crunchy top and a soft, moist bottom layer. It begins in the slow cooker and ends in the oven and ultimately, happily in your belly.  It takes a few hours to make, but only about 10 minutes of it is hands on and trust me, it is so worth it; you're so worth it. 

Short Rib Shepherd's Pie



Begin by preparing the slow cooker. Chop celery, carrots, and onions. 


Salt and pepper your short ribs. Heat olive oil in a pan and sear all sides of the short ribs. Place the seared short ribs, celery, onions, and carrots in the slow cooker. Cover with red wine and beef stock. Cook on low for 4 hours. 


Around 15 minutes before the 4 hours are up, begin the mashed potato preparation. Preheat the oven to 350 degrees. Cut a head of garlic in half crosswise and wrap in foil with olive oil and a little salt. Roast for about 15 minutes until soft and aromatic. Meanwhile boil your potatoes till soft enough to easily stab with a fork. Remove garlic from foil and squeeze out garlic. Mash with a fork. Drain the potatoes, then mash with olive oil, roasted garlic, and salt. Consistency should be creamy and soft like icing.  


Once the 4 hours are up remove bones from slow cooker and discard. Shred short rib meat with a fork. Equally disperse meat and vegetables between four ramekins. Cover with juices from slow cooker. Place roasted garlic mashed potatoes in a piping bag with a star tip and pipe potatoes on top of meat and vegetables. Bake in 450 degree oven till potatoes begin to brown, about 15 minutes. 


This is an entire meal in a ramekin. Comfort food at it's best. Easily re-heatable too, just microwave for 2 minutes then place in a toaster oven under the broiler for 3 minutes. Great lunch the next day! 


Short Rib Shepherd's Pie
Makes: 4 servings  |  Prep Time: 15 minutes  |  Cook Time: 4 hr 15 min.

Ingredients
1 lb bone-in short ribs
2 whole carrots, chopped
2 whole celery stalks, chopped
1 whole onion, chopped
2 cups red wine
1 cup beef broth
1/4 tsp salt
1 tsp pepper
1 head of garlic
2 whole large Idaho potatoes
splash of olive oil
pinch of salt

6. Serve warm or re-heat when ready to eat, in a microwave for 2 minutes then place in a toaster oven under the broiler for 3 minutes.
