Puff Pastry stuffed with Brie & Balsamic Peaches

After an excruciatingly painful foot spasm tonight, I am finally sitting in front of my computer, with my little pup, excited to share this new recipe with you. Balsamic vinegar is one of my favorite flavors; add it to a salad with oil and it's a healthy dressing, toss it on cooked veggies and you have whole new side dish, add a little sugar to it and reduce it, you have a sweet and tangy glaze. This is exactly the process I used to create this delicious flavor palette. I tossed the peaches in a sweet balsamic glaze and set them between flaky puff pastry layers with brie cheese. The brie helps to offset the sweet flavors with a touch of saltiness. These are a sure way to a someone's heart for Valentine's Day. 

Puff Pastry stuffed with Brie & Balsamic Peaches


With only 6 ingredients, this recipe is quick and easy. Pre-made puff pastry is the way to go, unless your a puff pastry pro, then have it at. I was going to be ambitious and try to make my own puff pastry from scratch, but I got very discouraged. Maybe one day when I have a full day with nothing to do I will try to conquer my puff pastry fear, but for now frozen puff pastry is the easiest choice. Cut out any shape you want for your pastry, I choose hearts since it's almost Valentine's Day. Brush the top of the pastry with an egg wash so it becomes golden brown. Bake the puff pastry as instructed on the package. Cut the peaches into 1" cubes.


In a saucepan heat the balsamic and sugar, until it reduces and thickens. Remove from heat and toss the peaches in the glaze.


Once the puff pastries are done, cut in half. Place a slice of brie on the bottom half of the pastry and top with balsamic peaches. Put the top of the pastry back on and place back in the warm oven to melt the cheese. 


Serve up these Stuffed Hearts with a glass of wine or port for Valentine's dessert menu. Bon Appetit!

Puff Pastry stuffed with Brie & Balsamic Peaches
Makes: 6 Servings  |  Prep Time: 3 minutes  |  Cook Time: 18 minutes

Ingredients
1 log frozen puff pastry
1 egg, beaten
1 peach
6 tbs balsamic vinegar
3 tbs sugar
4 oz brie

1. Preheat oven to 400 degrees. Cut out any shape you want for your pastry. Place on a greased baking sheet and brush the top of the pastry with the egg wash. Bake the puff pastry for 18 minutes or till golden brown on top. 

2. In a saucepan heat the balsamic and sugar, until it reduces and thickens. 

3. Cut the peaches into 1" cubes. Remove from heat and toss the peaches in the balsamic glaze. 

4. Once the puff pastries are done, cut in half. Place a slice of brie on the bottom half of the pastry and top with balsamic peaches. Put the top of the pastry back on and place back in the warm oven to melt the cheese. 

5. Drizzle with extra balsamic glaze if desired. Serve warm.
