Popeye's Favorite Lasagna

If Popeye had a favorite lasagna, this would be it. Full of his favorite green's, spinach, it's packed with a whole lot of flavor and nutrients, and not to mention, its super delicious and easy to make. Traditional lasagna is always a great meal, but this lasagna brings in veggies, seasoning, and a new spin on an old recipe. I made it for my husband and he just couldn't get enough of it. Thankfully it's one of those meals that two people always end up with leftover's of, but it reheats so well, it's almost better the second day! 

Popeye's Favorite Lasagna



Pretty much you begin with your staple lasagna ingredients. Tomato sauce, either homemade or store bought, lasagna pasta, ricotta cheese, mozzarella cheese, and an egg. What makes this recipe different is you also add in a package of frozen spinach, Knorr® Cream of Spinach mix, and asiago cheese. 

Begin by mixing together the ricotta, egg, spinach, Knorr® Cream of Spinach mix, asiago cheese, salt and pepper. Then begin by layering your ingredients in a 8"x10"glass baking dish. First lay down a layer of sauce so that the pasta does not dry up. Next add the pasta and layer it so that there are no holes through to the sauce below. 


On top of the pasta, spread a layer of the spinach, cheese mixture. Then more sauce, a layer of pasta, and spinach mixture, sauce, pasta, spinach mixture, sauce, pasta, sauce and then sprinkle some grated mozzarella cheese on top. Bake in a 350 degree oven for 30 minutes. 


Serve immediately with your favorite glass of wine. If you have leftovers, cover the glass baking dish with a lid or plastic wrap and refrigerator till ready to eat. Then either reheat the whole dish in the microwave or oven or slice out individual servings and reheat on a plate in the microwave. Flavors really seem to meld together after a night or two in the refrigerator. 


Popeye's Favorite Lasagna
Makes: 6 Servings  |  Prep Time: 5 Minutes  |  Cook Time: 30 Minutes

Ingredients
12 oz jar of tomato sauce, homemade or store bought
10 sheets of cooked lasagna noodles
8 oz skim milk ricotta cheese
10 oz package frozen spinach, defrosted & drained
1 package Knorr® Cream of Spinach Recipe mix
1 egg
1 cup shredded asiago cheese
1/2 cup mozzarella cheese
salt and pepper to taste

1. Preheat oven to 350 degrees. Begin by mixing together the ricotta, spinach, Knorr® Cream of Spinach mix, egg, asiago cheese, salt and pepper. 

2. Then begin by layering your ingredients in a 8"x10"glass baking dish. First lay down a layer of sauce so that the pasta does not dry up. Next add the pasta and layer it so that there are no holes through to the sauce below. On top of the pasta, spread a layer of the spinach mixture and then sauce on top of that. Repeat starting with pasta 3 more times ending the last pasta layer with sauce on top rather then the spinach mix. Sprinkle the mozzarella cheese on top. 

3. Bake in a 350 degree oven for 30 minutes or until center is warmed through and cheese has melted. Serve immediately.
