Breakfast Bread

Ah breakfast, my favorite meal of the day. Unless it's a work day, then it completely frazzles me because I have .2 minutes to think of something to have for breakfast and what I usually choose in that hasty moment is just not "favorite" meal worthy. Think fruit and a yogurt. Healthy, yes. Filling, kind of. Delicious and tasty, not so much. So if I do a little planning a head of time on the weekend, and prepare myself something perfectly breakfast worthy for the weekday, breakfast once again becomes my favorite meal. Here is where Breakfast Bread was created. It's sort of savory french toast meets breakfast sandwich. It's got all your favorite breakfast ingredients, eggs, cheese and bacon. Or if those aren't your favorite ingredients add whatever meat, or veggies, or herbs you want. What's better then that? Plus you can make it ahead of time and reheat, making it an easy choose when those hectic weekday mornings arise.

 Breakfast Bread


Begin by cooking the bacon or whatever meat you want to stuff the bread with. If using bacon make sure to cook the bacon to a well done state {crunchy}. The reason I say this is because it will be sitting under moist bread and can tend to get tough and chewy if not cooked well enough.


Next cut the middle section out of the baguette and reserve.  Cut the reserved center into cube sized pieces to be used later.


Whisk together the eggs, milk, pepper, onion powder, green onions, and cheese in a large bowl. Once well combined, drop in the cubed bread pieces. Stir around making sure all pieces are completely coated in the eggs.


Now take the bacon and layer it on the inside of your hollowed out bread. Make sure you still leave a path for the egg soaked bread. Then pour the egg, bread mixture on top of the bacon. Push it down so that you can fit it all in. 


Sprinkle with reserved cheese and bake till eggs are cooked and the top begins to brown. 


Slice into individual meal size pieces or if serving as an accompaniment, cut into 1" slices. Reheat in a toaster oven or oven, not a microwave as bread will get tough.

Makes: 5 Servings  |  Prep Time: 15 Minutes  |   Cook Time: 35 minutes

Ingredients
1 sour dough baguette (18 inches long)
6 pieces of bacon
5 large eggs
3 tbs whole milk
1 tsp onion powder
1 tsp pepper
1/2 cup grated Monchego Cheese
2 green onions (chopped)
salt to taste

1. Preheat oven to 350 degrees. Cook bacon till well done (crispy). Place on a plate lined with paper towels to remove excess oils.

5. Slice into individual meal size pieces or if serving as an accompaniment, cut into 1" slices. Reheat in a toaster oven or oven till middle is warm. Do not use a microwave as bread will get tough.
