Bang Bang Shrimp in Lettuce Wraps

Fried Shrimp...Yum! Fried Shrimp with a Spicy, Chili Mayo...double Yum! Fried Shrimp with a Spicy, Chili Mayo, Avocado's, Onions and Peppers, in a Lettuce Wrap...Yumilicous! This is one of my favorite meals now. Ok it's not healthy because of the fried shrimp, but it is in a lettuce wrap instead of a tortilla, give a girl some credit for trying. I honestly like the lettuce wrap better then a tortilla in this case. It gives a nice fresh crunch when you bite into it; it's sort of like a salad turned taco. It can also be a great appetizer if you make the portion size smaller, since it's hand held and easy to grab and go. Something that would be simple enough to grace your table for Super Bowl even.

Bang Bang Shrimp in Lettuce Wraps



I apologize for not taking step-by-step photos like I usually do. The night I made these I was tired, cranky, and not in a picture taking mood...until I tasted these; instant better mood. I knew I had to share this recipe with you, even with out the step-by-step photos. I hope you can forgive me.


Bang Bang Shrimp in Lettuce Wraps
Makes: 4 Servings  |  Prep Time: 8 Minutes  |  Cook Time: 10 minutes

Ingredients
1/2 lb of cleaned large shrimp, prefrozen or fresh
2 cups vegetable oil for frying
1 egg, beaten
1/2 cup panko breadcrumbs
1 head of iceberg lettuce
1 avocado
1 tbs olive oil
1 medium red pepper
1 white onion
lime juice for squeezing

For Sauce
1/2 cup mayo
1/4 cup Thai Sweet Chili Sauce 
1 tbs Frank's Red Hot (or to taste)

1. Heat the vegetable oil in a pan. Oil is hot enough when a crumb bubbles and browns when you drop it in the oil. Dredge shrimp in egg, then breadcrumbs. Place in oil and fry till golden brown on all sides; about 3 minutes each. Place on a paper towel lined plate to drain.

2. Chop up the red pepper and onion. Heat olive oil in a pan and saute peppers and onions till soft and onion is translucent. 

3. Make sauce by mixing together mayo, Thai Sweet Chili Sauce and Franks Red Hot. 

4. Cut avocado into 1/4 slices. Assemble Taco by tearing off a full leaf of lettuce, spoon some peppers and onions onto bottom of leaf, next place your fried shrimp and lastly your avocado slices. Drizzle with chili sauce. 

5. Squeeze lime juice over top for a citrus tang. Pick up lettuce wrap and dig in!
