This stuff is additively sweet. It's a pure sugar rush that you will want to keep eating. Made with crushed up Girl Scout© Samoa cookies for that coconutty, chocolaty, crunch, a layer of caramel and then more chocolate with a sprinkling of chocolate chips.. Another untraditional use for those Girl Scout© cookies your buying up this season.
Samoa Caramel Bark
We then layered them on the bottom of a foil lined baking pan. On top of that we poured the butter, and brown sugar mixture that we had combined on the stove top. We baked that in a 375 degree oven for 8 minutes. In that amount of time the sugar mixture will have caramelized. Once the caramel is done, take it out of the oven and sprinkle with chocolate chips. Place in the refrigerator or freezer to harden.
Remove from the pan. Cut or break into individual size pieces from the sheet and serve as an accompaniment to ice cream, eat on it's own or share by placing in a pretty box and giving it as a gift.

Ingredients
2 Boxes Samoa Girl Scout© Cookies
2 sticks of unsalted butter
1 cup light brown sugar
1 1/2 cups chocolate chips
1. Preheat oven to 375 degrees. Crush Samoa cookies into small pieces. Place Samoa pieces at the bottom of a foil lined 9x11 baking sheet.
2. In a saucepan melt butter and brown sugar. Bring to a boil and stir for 3 minutes. Pour over top Samoa pieces.
3. Bake for 8 minutes. Brown sugar mixture will caramelize and bubble. When done, remove from oven and sprinkle with chocolate chips. Place in the refrigerator or freezer to harden.
4. Once hard, break or cut into individual pieces.
