I ♥ U S'more Cheesecake

Cuddling under a blanket, transfixed by the glitter of the stars above as your marshmallows toast over an open campfire. Pressing the marshmallow between two graham crackers and chocolate, and sharing the first bite of sweet, fluffy, goodness...this to me is pure romance. This was the ever present image I wanted to evoke as I created these darling little S'more Cheesecake Hearts. Cheesecake infused with marshmallows, graham cracker crust, and a chocolate chip at the center of the heart bring together the classic tastes of the infamous s'more. A perfect little bite sized treat to package up and share with the one who shares your heart for Valentine's Day.

I ♥ U S'more Cheesecake
 

You'll need the essential campfire ingredients, along with a few others. I used mini heart cups, but this recipe would work well with mini muffin tins as well.


Begin by pulsing the graham crackers in a food processor till they become crumbs. Add melted butter to the food processor and pulse till butter combines. Press the crumbs into the bottom of your muffin cups.


Next melt your marshmallows in a saucepan over medium heat. Continuously stir the marshmallows so they do not burn on the bottom. Once they are completely melted remove from heat.


In an electric mixer beat the cream cheese till smooth. Add in the egg, mix till combined. Add the melted marshmallow. Beat on medium speed for 5 minutes. Mixture will become light and smooth. Fill muffin cups about 3/4 full with the cream cheese mixture. Bake in a 350 degree oven for 15 minutes.


Remove from oven and finish by placing a chocolate chip in the center of each heart. Feel free to add more chocolate if your ♥ so desires. Get it, heart. Hee hee. Then you share {or don't, cause we all know that it would be just as easy to eat them all yourself} your hearts with someone special. Happy Valentine's Day!

Makes: 12 Servings  |  Prep Time: 10 minutes |  Cook Time: 15 minutes

Ingredients
12 graham crackers
3 tbs unsalted butter, melted
4 oz cream cheese, room temperature 
10 oz bag of large marshmallows
1 large egg
12 chocolate chips

3. In an electric mixer beat the cream cheese till smooth. Add in the egg, mix till combined. Add the melted marshmallow. Beat on medium speed for 5 minutes. Mixture will become light and smooth. Fill muffin cups about 3/4 full with the cream cheese mixture. Bake in a 350 degree oven for 15 minutes.

4. Remove from oven and finish by placing a chocolate chip in the center of each heart. 

*Can be refrigerated for up to 4 days.
