It's 5'oclock somewhere right? So why not Bourbon for breakfast? Well maybe just some bourbon in your syrup to add a little fun to your morning. This was an experimental dish that came out just divine. I had an apple that was on its way out and a bottle of bourbon that was down to it's last shot, so I figured why not be creative and see what I come up with. So thats what I did and I have to say I was pleasantly surprised with the result. This is a recipe I will definitely make again, and I have learned the powers of what bourbon does to food; it makes it bittersweet!
Cinnamon Wheat Pancakes with Bourbon Apple Syrup

Cinnamon Wheat Pancakes with Bourbon Apple Syrup
Start by making the pancake batter. Wet ingredients in one bowl, and dry in another. Sift together whole wheat flour, baking powder, salt, cinnamon and brown sugar. In the other bowl whisk together milk, an egg, butter and sour cream.
Slowly pour the dry into the wet, whisking till well combined. Pour batter onto a hot, oiled skillet. Turn pancakes over once batter starts to bubble.
In the meantime, put the peeled, cored and sliced apples in a saucepan with a little sugar and cinnamon. Saute for a few minutes, then add the bourbon. Cook till the bourbon is gone. Next add the syrup and cook again for another 3 minutes.
Once the pancakes are done, top with the bourbon apple syrup. Add more syrup if needed.
Serve warm. There is no fear of getting drunk off of these pancakes, only giddy with delight at how easy and yummy they are.

Makes: 4 Servings | Prep Time: 5 minutes | Cook Time: 15 minutes
Ingredients:
For Pancakes
1 1/2 cups whole wheat flour
3 1/2 tsp baking powder
1 tsp salt
1 tbs brown sugar
1 1/4 cup milk
1 egg
1 1/2 tbs butter
1 1/2 tbs sour cream
1 tbs cinnamon
For Topping:
1 apple, peeled, cored, and sliced
1 tsp sugar
1/2 tsp cinnamon
1/4 cup bourbon
1/2 cup maple syrup
1. In a large bowl sift together whole wheat flour, baking powder, salt, cinnamon and brown sugar. In the other bowl whisk together milk, egg, butter and sour cream. Slowly pour the dry mixture into the wet, whisking till well combined.
2. Pour batter onto a hot, oiled skillet. Turn pancakes over once batter starts to bubble. Remove from skillet when both sides of pancakes are lightly browned.
3. In the meantime put the peeled, cored and sliced apple in a saucepan with the sugar and cinnamon. Saute for a few minutes, then add the bourbon. Cook till the bourbon is gone. Next add the syrup and cook again for another 3 minutes.
4. Put the pancakes on a plate and top with the bourbon apple syrup. Add more syrup if needed. Serve warm.
