The H.B. Sandwich

Morning! We've been under Hurricane Irene watch for the last 24 hrs here in NJ. With limited resources (a fridge full of food), stone age technology (electricity, running water, cable television), we're pretty much living in the dark ages...not. Even with 75 mph winds last night and the torrential rain we were able to cook ourselves a good ol' fashion Sunday breakfast this morning.


So here's how to make the Hurricane Breakfast Sandwich...



First you start buy frying up some BACON! I swear Eva's ears just went up at the idea of it. My husband and his terrible table manners has been giving her bacon scraps. You can't even open a package of bacon without finding her trailing your feet. 



Then you butter up some rolls, throw'em on a hot griddle and let them crisp up, sort of like texas toast rolls. In the meantime cook up some fried eggs.  


Last step is to assemble the sandwich. Egg, bacon...no not for you Eva... and cheese. We used provolone because it's what we had in the house. Put on a plate and devour. 



Ok now you can have the leftover bacon Eva... I mean how do you say no to that face?
